Door de huidige onzekere situatie durven we nog niet te hard te hopen op een mooie zomervakantie in Frankrijk. Toch lijken de voorspellingen gunstig te zijn. Europa doet er alles aan om rond de zomervakantie weer open te gaan voor toeristen. De alpen kennen we vooral van bergen, wandelingen en natuurlijk wintersport. Maar voor dit alles werd uitgevonden was er al kaas, en vooral lekkere kaas. Hoog in de Alpen groeit tussen de bergtoppen rijk en kruidig gras op de weiden. Dat wordt in zomer door de koeien omgezet in heerlijke romige melk die uiteindelijk wordt verwerkt tot kaas, hele goede kaas. Lees verder Kazen uit de Alpen →

De Auvergne ligt in het grote lege midden van Frankrijk. Leeg is er het natuurlijk niet maar het is waar dat hier weinig mensen wonen. Dit alles heeft te maken met het landschap dat met de oude bergen van het Massief Centraal. Waar wij nu prachtige natuurschoon zien was dit eeuwenlang een moeilijk te bereiken gebied waar de inwoners de dingen op hun eigen manier deden en zo hun eigen wetten hadden.

Foie gras, we kennen het allemaal. Ganzenlever of eendenlever, het volksvoedsel nummer één in Frankrijk. Bij ieder diner van een beetje importantie, met name het kerstdiner natuurlijk, wordt wel als voorgerecht een schijfje Foie Gras geserveerd, bovenop een stukje geroosterd brood en meestal met iets zoetigs erbij, een beetje vijgen -of pruimenmoes of iets dergelijks. Een stukje peperkoek tref je ook wel eens aan. De meeste Nederlanders gruwelen van Foie Gras en bij hen staan de vreselijke beelden van het geforceerd voederen van ganzen op het netvlies gebrand.

Wie geregeld door het Franse platteland trekt is het ongetwijfeld opgevallen dat de begraafplaatsen hier flink zijn. Ze liggen vaak aan de rand van de bebouwing en zijn niet zelden ommuurd en vormen zo een dodendorp, soms groter dan het dorp zelf. Als je over zo’n begraafplaats loopt vraag je je al snel af hoe een Franse begrafenis in zijn werk gaat. Gastblogger Kees Wijnen maakte het mee op oudejaarsdag en deelt zijn ervaringen. En die zijn toch net even anders dan in Nederland.

Eten is één van die zaken die Frankrijk zo aantrekkelijk maakt. Het Franse eten is over het algemeen van een hoger niveau en het is vooral anders. Niet te veel, maar precies genoeg om het spannend te houden. En dan hebben we het niet alleen wat er op je bord ligt, ook op de manier hoe de Fransen met hun eten omgaan verschilt. De Fransman is iemand van tradities, vastgeroeste gewoontes, gebruiken, rituelen die ze niet snel of misschien nooit zullen veranderen. Eén van die vaste tradities is het Franse dorpsfeest. Ieder dorp, maar dan ook ieder dorp heeft één keer per jaar zijn dorpsfeest, meestal gehouden in juli en augustus. Je kunt het een beetje vergelijken met kermis taferelen in Nederland. Het feest begint meestal vrijdag ‘s avonds en eindigt zondag in de kleine uurtjes.

Kaas is misschien wel het bekendste Franse voedsel en het behoort samen met wijn, de baguette en de croissant tot de culinaire monumenten van Frankrijk. Waar het brood vooral een nationaal symbool is gaan kaas en wijn veel verder en vormt het ook een belangrijk onderdeel van de identiteit van de regio’s. Iedere streek heeft zijn eigen kaas waarvan ieder dorp weer zijn eigen variant maakt. Heerlijk natuurlijk!

Maar er zijn kazen die boven de streek uitstijgen zoals de Brie, de Camembert en natuurlijk de keizer der kazen; de Roquefort. Hoe wordt deze wereldberoemde schapenkaas gemaakt?
