Tussen Carcassonne en Limoux ligt het prachtige dorp Saint Hilaire. Het is gebouwd rondom een abdij die nog altijd fier midden in het dorp staat. Hierom heen kronkelen nauwe straatjes waar je opvallend weinig toeristen tegenkomt.
